Ingredients:
2 medium apples (any kind)
1 egg
1/2 cup sugar
2 Tbsp lemon juice
1 cup all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/4 tsp salt
1 cup cranberries (fresh or
frozen)
Step 1.
Peel apples.
Step 2.
Grate apples using the largest
hand grater holes.
Step 3.
Place apples into mixing bowl.
Add sugar.
Step 4.
Add lemon juice.
Step 5.
Add cinnamon.
Step 6.
Add nutmeg.
Step 7.
Add salt.
Step 8.
Add baking powder.
Step 9.
Add baking soda.
Step 10.
Mix just until all ingredients are
blended.
Step 11.
Add flour.
Step 12.
Add egg.
Step 13.
Mix just until blended. Do not
overmix!
Step 14.
Add half of cranberries and mix
just to blend them in.
Step 15.
Line muffin tin with paper cups.
Step 16.
Distribute batter evenly into
cups, filling only 3/4 of cup.
Step 17.
Place 2-3 cranberries on top
of each muffin.
Step 18.
Bake in preheated oven at 375
degree f for 25-30 minutes.
Transfer the muffins to a rack to
cool. Enjoy!
