Baked Spicy Catfish
INGREDIENTS:
4 (4-ounces each) pieces catfish
filets
1/4 teaspoon salt (or to taste)
1/4 teaspoon onion powder
1/4 teaspoon dried basil
1/4 cup grated Parmesan cheese
pinch of cayenne pepper
1/4 teaspoon ground cumin
2 tablespoons butter
cooking spray (or vegetable oil)
for greasing
Preheat oven to 375 degrees F.
Place catfish filets on lightly
greased (with cooking spray)
baking sheet.
Sprinkle with salt.
Sprinkle with onion powder.
Sprinkle with dried basil.
Divide Parmesan cheese in 4
even parts and put on top of
each fish filet. Sprinkle with a
little cayenne pepper.
Sprinkle with ground cumin.
Top each fish filet with 1/2
tablespoon butter. Bake in
preheated oven at 375 degrees
F 30 minutes, or until fish is
golden brown and easily flakes if
poked with fork.
Serve hot.
