Ingredients:
3-4 ripe medium-size bananas
1 cup sugar
2 eggs
1 1/4 cup all-purpose flour
3/4 tsp baking soda
1/2 tsp salt
1/2 cup vegetable oil
Optional: 1/2 cup chopped
walnuts
cooking spray
bread baking dish, 8.5x4.5x2.5
inches
Preheat oven to 375 degrees F.
Peel bananas and mash them
roughly with fork. Place
mashed bananas into
medium-size mixing bowl.
Break eggs into small bowl.
Add sugar.
Mix eggs and sugar with wire
whisk until well-blended.
Add egg mixture to mashed
bananas.
Mix well with wire whisk.
Add salt.
Add baking soda.
Mix well.
Add flour.
Mix with wire whisk just until the
flour is blended with other
ingredients. Do not over mix!
Add oil. Optionally, you may
add chopped walnuts.
Spray bread baking dish
(8.5x4.5x2.5 inches) with
cooking spray and pour banana
mixture into it.
Level batter evenly with
spoon.
Bake in preheated oven at 375
degree F for 35-45 minutes or
until toothpick (or wooden
skewer) inserted into center of
bread comes out clean (nothing
sticks to it).
Serve warm or cold.
This simple yet hearty bread is best served warm.
Ripe bananas are the key to this sweet, no-frills
delight. As a variety, try making it without the nuts.
