INGREDIENTS for four:
2 ripe bananas
1 cup mascarpone
1/2 cup confectioners' sugar (or
to taste)
1/4 cup strong black coffee (or
espresso)
1 ounce brandy (or rum)
20 ladyfingers, broken in half
2 tablespoons cocoa powder
4 martini glasses
Place mascarpone and
confectioners' sugar into chilled
mixer bowl.
Beat for 2 to 3 minutes until very
light and spreadable.
Mash half banana finely with fork.
Add mascarpone cream and
blend well with fork or wire whisk.
Blend coffee (or espresso) and
brandy (or rum) together.
Dip 4 ladyfinger halves into
coffee mixture one at a time and
immediately take them out with
spoon.
Place dipped ladyfinger halves
into 4 martini glasses (4 halves
per glass), slightly overlapping
them.
Spoon half of mascarpone
mixture into over ladyfingres,
dividing them evenly among
glasses.
Spread mascarpone mixture
evenly with spoon to cover
ladyfingers completely.
Dip remaining ladyfinger halves,
this time putting 6 halves into
each martini glass, over
mascarpone mixture.
Top with remaining mascarpone,
dividing it evenly among glasses.
Place cocoa powder into wire
strainer and generously coat the
top layer of mascarpone
completely with cocoa.
Slice remaining 1 1/2 bananas
thinly.
Arrange banana slices in a
circle, around martini glass
edges.
