Ingredients:
2 pounds Yukon gold potatoes
1 teaspoon salt (or to taste)
1/4 cup butter or margarine
4 chives
Peel potatoes.
Place potatoes in large pot with
water to cover about 1 inch
above potatoes.
Add salt.
Bring water to boil. Reduce heat
to medium-low. Simmer covered
15 to 20 minutes or until
potatoes are fork tender.
Meanwhile, cut chives finely,
crosswise.
Place colander into sink. Drain
potatoes.
Return potatoes to pot. Add
butter. Cover butter with several
potatoes. Allow butter to melt,
about 2 minutes.
Mash with potato masher until all
blended but still chunky.
Sprinkle with chives. Serve
immediately.
