Ingredients:

1/2 pound ground beef
8 ounces mushrooms
2 tablespoons extra virgin olive
oil
1 onion
1/2 cup sun-dried tomatoes
3 ounces blue cheese
1/4 teaspoon ground white (or
black) pepper
1 package puff pastry (thawed in
refrigerator overnight)
1 egg
flour for dusting

Preheat oven to 400 degree F.

Prepare filling:

Place sun-dried tomatoes into
food processor. Pulse until
well-chopped.
Cut blue cheese into several
rough strip













Turn board and dice blue
cheese strips roughly.

















Add blue cheese to chopped
tomatoes and mix ingredients
until well-blended.

Pour oil into large skillet.


















Add onions and saute over
medium heat for 3 to 4 minutes
until slightly golden, stirring
several times with wooden
spatula.















Slice mushrooms thinly.
Add mushrooms to onions in
skillet.


















Saute for about 3 to 4 minutes
over medium heat, stirring
ocassionally.




































When mushrooms are tender,
add ground beef.


















Add salt.


















Add pepper.

















Cook meat over medium heat for
about 10 minutes or until pink
color is gone and meat becomes
brownish. Stir meat several
times in the process, breaking it
into small pieces. Take meat out
of skillet and place into bowl.
Cool completely. Discard any
liquid using a spoon.












Sprinkle wooden board with
some flour.

















Place puff pastry in the middle of
the board.


















Sprinkle puff pastry with some
flour.

















Using rolling pin, roll puff pastry
so that it stretches out.

















The pastry will almost double in
length.

















Spray an oven-proof dish with
cooking spray.
Place half of puff pastry (the
longer end in) into baking dish.


















Add meat and mushroom filling.






































Sprinkle evenly with sun-dried
tomato mixture.

















Fold pastry over dish.



















Pinch edges to seal.
Fold edges down to hide.





































Using a sharp knife, make
several slots on top of pie.





































Break an egg into small bowl.



















Mix it well with fork.





































Brush pie with egg mixture.
Place baking dish in center of
preheated oven. Immediately
reduce oven temperature to 350
degree F and bake for 30 to 45
minutes (baking times may vary
depending on oven) or until
crisp and deep golden-brown.
Take baking dish out of oven.




Cut into pieces and place them
onto serving dishes. Serve hot.
This delicious and flaky pie is intensely flavored
in the best of the Mediterranean tradition.
