Russian Beef Stroganoff
INGREDIENTS:
1 pound lean beef
1/2 cup all-purpose white flour
2 tablespoons vegetable oil
1 large onion
1 cup sour cream
1 cup tomato sauce
1 teaspoon salt (or to taste)
1/2 teaspoon ground pepper (or
to taste)
8 ounces linguine
DIRECTIONS:
Chop onions very fine.

Pound beef with meat tenderizer
just until it becomes no more
than 1 inch thin.
Cut beef along the grains into
1/2-inch thin strips.
Slice each strip across the
grains into thin strips.
Place flour in large plate.
Add beef, a little at a time. Mix
with fork (or with your fingers) to
coat meat with flour all over.
Hear oil in large skillet over high
heat 30 seconds.
Add chopped onions.
Put floured beef on top of
onions. Cook over high heat
until beef becomes shiny and
slightly golden, just a few
minutes.
Meanwhile, in a bowl, mix
together sour cream and tomato
sauce.
Add salt.
Add pepper.
Add to beef.
Stir well. Cook 25 to 30 minutes
over medium-low heat, covered.
Stir occasionally.
Meanwhile, cook linguini.

and sauce. Serve hot.
