Ingredients:

4 tablespoons butter
4 tablespoons flour
2 cups milk or half and half
1/2 teaspoon salt (or to taste)
1/8 teaspoon ground nutmeg
1/2 cup grated Mozarella cheese
1/4 cup shredded Parmesan
cheese
1/4 cup blue cheese




Melt butter in heavy skillet, over
low heat.





Add flour.


















Immediately, stir with wire whisk
until smooth.

















Cook over low heat for 2 to 3
minutes, stirring constantly.
Make sure the sauce does not
brown.















Gradually, add milk, whisking
constantly. Stir well until smooth.






































Add salt.


















Add nutmeg.


















Add Mozarella cheese.



















Add Parmesan cheese.



















Add blue cheese.


















Mix well until smooth. Cook over
low heat for 2 to 3 more minutes,
until sauce thickens. Stir
constantly.







Serve immediately with your
favorite pasta or with any meat.
