Blue Cheese and Pine Nut Salad

Ingredients:
2 cups mixed greens
1 medium tomato
1 Kirby cucumber
2 Tbsp pine nuts
2 Tbsp extra virgin olive oil
2 Tbsp blue cheese, crumbled
4 large basil leaves
Slice tomato in half.
Cut each half into several thin
slices.
Put mixed greens into bowl and
add tomato slices.
Cut both cucumber edges off
and discard.
Cut cucumber in half, lengthwise.
Cut each half into thin slices.
Add cucumber slices to salad.
Add pine nuts.
Stack basil leaves and cut them
into thin strips, crosswise.
Add basil strips to salad.
Drizzle with olive oil.
Add blue cheese.
Mix salad with spoon.
Enjoy!
