Ingredients:

2 medium tomatoes, diced
1 teaspoon dried Italian
seasoning
4 tablespoons grated Parmesan
cheese
2 tablespoons extra virgin olive
oil
salt to taste
ground black pepper to taste
1 small French (or onion)
baguette

Dice tomatoes.

Place tomatoes into mixing bowl.
Add Parmesan.
Add Italian seasoning.
Add pepper.
Add olive oil.
Add salt.
Mix to blend all ingredients well.
Cover and chill in refrigerator for
1-2 hours, or overnight.




Slice baguette diagonally.
Place baguette slices on cookie
sheet (or baking tray) and broil
until lightly brown. Turn slices
and allow other side to brown.
While still warm, spoon tomato
mixture on toasts.
Serve immediately. You may
place toasts into hot oven for a
minute or two to melt cheese.
Variations:
1. Add finely chopped garlic into
tomato mixture.
2. Substitute Italian seasonings
for dried basil.
