Best ever waffles! Make awesome
Sunday breakfast.
Buttermilk Waffles
INGREDIENTS:

8 egg yolks
1 1/2 cup buttermilk
6 tablespoons butter
1/2 cup confectioner's sugar
2 cups flour
1 teaspoon baking soda
1/4 teaspoon salt
zest and juice of 1/2 lemon
fresh fruit, honey, maple syrup,
or whipped cream for serving



In a medium bowl, combine egg
yolks and buttermilk.





Mix well.





































Place butter in large bowl.
Microwave for 15 seconds. (You
may do this in small bowl and
then transfer butter into large
bowl to whip.)















Whip butter until creamy.



















Add confectioner's sugar.


















Whip until smooth.





































Add egg mixture.



















Whip until smooth.







































Add flour.


















Add baking soda.


















Add salt.


















Mix to combine all ingredients
(do not overmix).






































Add lemon zest.


















Add lemon juice.


















Stir gently.


















Heat waffle iron. Spray it with
little cooking spray. Spoon
batter onto waffle iron (amount
varies according to waffle irons,
so refer to its instructions).
Spread evenly with spoon. Bake
according to waffle iron
manufacturer's directions until
golden brown.





























Serve with fresh fruit or berries,
whipped cream, honey, maple
syrup, or just dust with
confectioner's sugar.





Makes 8 waffles.
