INGREDIENTS:

1/2 cup heavy cream
8 ounces Ricotta cheese
1/2 teaspoon salt (or to taste)
1/4 cup chopped chives
1/4 cup chopped scallions
bread slices or crackers
optional: chopped parsley for
garnishing

DIRECTIONS:


Place heavy cream into deep
bowl. Beat with electric mixer for
1 minute on medium speed until
slightly fluffy. Do not overbeat!




Add Ricotta cheese.


















Beat just to blend.



















Add salt.


















Beat until fluffy, about 30
seconds.





































Add chives.

Mix to blend all ingredients well.
Chill at least 30 minutes to blend
flavors.

















Serve with bread slices,
crackers or bagels. Sprinkle with
chopped parsley, if desired.
