INGREDIENTS:

4 sweet pickles
8 ounces Ricotta cheese
2 tablespoons chopped dill
2 tablespoons chopped parsley
2 tablespoons chopped scallions
crackers, bread slices or bagels
optional: pickle slices for
garnishing


DIRECTIONS:

Chop dill.






Cut pickles into several slices,
lengthwise.


















Cut pickles into small chunks,
crosswise.





































Place ricotta cheese into bowl.
Add chopped pickles.

















Add chopped dill.



















Add chopped parsley.

Mix well. Chill at least 30 minutes
in refrigerator to blend flavors.




Serve with crackers, bread
slices or bagels. If desired, top
with pickle slices.
