Ingredients:

4 medium potatoes
1/2 teaspoon salt, or to taste

4 eggs
1 tablespoon butter
1/4 cup grated Cheddar cheese
salt to taste (optional)


Preheat oven to 300 degrees F.

Cook potatoes and fry.

Take potatoes out, place them
onto plate and put into preheated
to 300 degrees F oven to keep
warm.




Melt butter in large skillet over
medium heat.
















Crack egg by tapping it on the side
of pan as near to the middle of
shell as possible. Use your thumbs
to prise the shell halves apart
gently, breaking the shell and
releasing egg into pan. Repeat
with remaining 3 eggs.
































If desired, sprinkle with salt.



















Sprinkle eggs with Cheddar
cheese.
















Cook over medium-low heat until
set (and until egg whites are
opaque), about 4 to 5 minutes, or
until desired firmness.
















Slide eggs onto serving plate.












Serve with fried potatoes.
Surprisingly tasty and hearty, this filling
breakfast can be made from leftover potatoes.
