INGREDIENTS:

6 to 8 cooked potatoes
2 tablespoons butter
1 teaspoon curry powder
4 tablespoons grated Mozzarella
cheese



DIRECTIONS:

Cook potatoes or use potato
leftovers.

Slice potatoes crosswise.






Melt butter in large skillet over
medium heat.

















Add potato slices.


















Sprinkle with curry powder.



















Cook 4 to 5 minutes over
medium heat, or until golden
and crisp on bottom.
















Flip over with fork or spatula.


















Cook 4 to 5 minutes over
medium heat, or until golden
and crisp.

















Sprinkle Mozzarella cheese over
potatoes. Take skillet off the
heat. Let cheese melt, about 30
to 45 seconds. Using spatula,
transfer potatoes onto serving
plate.

























Serve immediately.
