INGREDIENTS:

1 tablespoon unsalted butter
4 scallions, chopped
4 medium eggs
1/4 cup milk or cream
1/2 teaspoon salt (or to taste)
5 or 6 white bread slices
2 tablespoons shredded
Mozzarella cheese
2 tablespoons shredded
Parmesan cheese


DIRECTIONS:
Break eggs into medium bowl.





Beat well with wire whisk or fork.



















Add milk or cream.



















Add salt.


















Mix well.


















Melt butter in medium skillet over
medium heat.

















Add scallions and cook over
medium heat for two minutes,
stirring occasionally.

Place bread slice into bowl with
egg mixture.





































Quickly flip over with fork.


















Immediately lift bread with fork.
Do not allow bread to soak!


















Transfer to skillet.


















Repeat with the remaining bread
slices.


















Pour remaining egg mixture over
bread slices evenly.




































Sprinkle with Mozzarella cheese
evenly.





Sprinkle with Parmesan cheese
evenly.











Cover with lid. Reduce heat to
low. Cook for 5 to 7 minutes, or
until eggs are set (or until
desired egg firmness).















Slide toasts onto serving plate.









Serve immediately.
