Ingredients:

4 medium tortillas
1 cup shredded Mexican cheese
mix (or Montery Jack, Mozarella,
Cheddar, or any other cheese
you have)
1 cup shredded chicken breast

2 scallions




Cut scallions crosswise.
Place one tortilla into preheated
ungreased skillet.


















Spread half the chicken evenly
over tortilla.

















Spread half the cheese evenly.


















Sprinkle with half the chopped
scallions.


















Top with another tortilla.


















Cook until crisp and slightly
golden on bottom. If desired, flip
over and cook on another side
until golden and crisp.






Serve immediately.
