With cake icing spatula or flat knife, spread half tablespoon Dijon mustard all over one side of tortilla.
Place 1/4 cup mixed greens on one half of tortilla (the half that is closer to you). Avoid sides of tortilla.
Spread 1/4 of chicken meat over greens. Avoid sides of tortilla.
Fold left side of tortilla (the part that has no filling on it) and fold it over filling. Repeat with right side of tortilla.
Roll tortilla up to enclose filling in neat packet.
For crisp tortillas, place tortilla seam side down onto preheated skillet and brown on one side for about a minute over medium heat. Flip over and brown on another side, about a minute.
Cut tortilla in half diagonally, and serve warm or cold.
