4 ripe medium-size bananas 1/2 cup white sugar 1/2 cup dark brown sugar 2 eggs 1/2 cup vegetable oil 1 teaspoon vanilla extract 1 1/2 cup all-purpose flour 1 teaspoon baking soda 1 teaspoon vinegar 1/2 tsp salt 4 ounces dark chocolate
Preheat oven to 375 degrees F. In large mixing bowl, mash bananas with fork roughly.
Add brown sugar.
Add white sugar.
Add eggs.
Add oil.
Add vanilla extract.
Mix with fork well.
Add flour and baking soda.
Add vinegar directly onto soda.
Allow soda to bubble, just a few seconds.
Add salt.
Chop chocolate into rough chunks.
Add to flour.
Mix with spoon until smooth. Do not overmix. Just mix until all flour is dissolved.
Grease baking dish with cooking spray. Pour batter into baking dish.
Level with spatula.
Bake in preheated oven at 375 degrees for 50 minutes to 1 hour or until deep golden brown.
Test for doneness: insert wooden skewer or toothpick into center. If it comes our clean, the bread is done. Otherwise, bake for additional 5 minutes and test again.
Transfer baking dish onto wire rack and cool completely. Cut into slices and enjoy!
