Ingredients:

1/2 cup vegetable oil
1/3 cup white sugar
2 tablespoons dark brown sugar
1 teaspoon vanilla extract
2 eggs, at room temperature
1 cup all-purpose flour
1/2 cup wheat flour
2 teaspoons baking powder
2/3 cup milk
1/2 cup chopped walnuts
1 cup semisweet chocolate chips

Preheat oven to 375 degrees F.


Pour oil into medium-size mixing
bowl.



Add white sugar.


















Add brown sugar.



















Add eggs.


















Add vanilla extract.



















Add baking powder.


















Mix well with wire whisk.


















Add both flours.


















Add milk.



















Mix well with wire whisk until just
smooth. Do not over mix!


















Add walnuts.


















Add chocolate chips. Reserve
some for decorating on top of
muffins.
















Mix with wire whisk just briefly.


















Line muffin tin with paper cups.
Spoon the batter evenly into
cups, filling only about 3/4 of the
cup. Place several chocolate
chips on top of each muffin.





















































Bake in preheated oven at 375
degrees F until lightly colored,
about 25 minutes. Test with
toothpick or wooden skewer:
insert toothpick into center of
muffin - if it comes out clean
(nothing sticks to it), the muffins
are done.



















































Take muffins out and cool
completely on wire rack.









Enjoy! If desired, serve it with
jam, honey, maple syrup, etc.
