INGREDIENTS (4 servings):
1 cup all-purpose white flour
1/2 cup cocoa powder
3 teaspoons baking powder
2 tablespoons white sugar
3 large eggs
3 tablespoons vegetable oil
1 1/2 cups milk
1/2 teaspoon salt
maple syrup
fresh strawberries for garnishing
DIRECTIONS:
In large bowl whisk together
flour, cocoa powder, baking
powder, sugar, eggs, oil, milk.
The mixture should be slightly
lumpy.
Heat pancake griddle. Spray
with cooking spray. Laddle 1/4
cup of batter (or follow griddle
instructions) for each pancake
onto griddle.
Cook until bubbles form on the
surface and edges slightly
darken, about 2 minutes. Flip
over and cook until pancake
resists slightly when gently
pressed in center with your
finger, about 2 minutes.
Drizzle with maple syrup, garnish
with several strawberries and
serve immediately.
