Country Stew
INGREDIENTS:

4 tablespoons extra virgin olive
oil
1 medium onion, slivered

1 cup flour for dusting
2 pound lean beef, cubed

2 cups beef broth
4 large potatoes, cubed

1 pound baby carrots
1 tablespoon salt (or to taste)
1/2 teaspoon ground black
pepper (or to taste)
1 teaspoon dried thyme (or
dried tarragon, if preferred, or
both)
2 tablespoons Worcester sauce
1 pound frozen green beans
1 can (16 ounces) diced or
halved tomatoes




Heat oil over medium heat in
large Dutch oven or pot.



Add onion. Saute over medium
heat until golden, abt 7-8
minutes. Stir occasionally.













































Place flour in large plate or bowl.



















Add beef, several pieces at a
time.


















Coat with flour all over.





































Add meat to pot with onion.



















Cook over medium heat until no
longer pink and browned, about
7-8 minutes. Stir often.




































Add beef broth.


















Add potatoes.


















Add carrots.



















Add salt.


















Add pepper.



















Add thyme.


















Stir well. Bring to boil.


















Reduce heat to very low. Cover
tightly. Cook 15 minutes.

















Add Worcester sauce.



















Add frozen beans.



















Add tomatoes.


















Stir well.


















Cook, uncovered, over medium
heat, 5-6 more minutes, or until
green beans are tender.






Serve hot.
