Ingredients:

1 package linguini (12 ounces)
1 cup heavy cream
1/2 cup shredded Cheddar
cheese
4 chives
1 chicken breast, boneless,
skinless
1 garlic clove
salt to taste
1/4 teaspoon ground white (or
black) pepper
1/4 cup dry white wine

Slice garlic.

Trim all fat off the chicken.
Cut chicken into thin strips,
crosswise.
Pour oil into large skillet and
heat over medium heat for a
minute.
Add chicken.
Immediately separate chicken
into single pieces with wooden
spatula or spoon.
Add garlic.
Cook chicken over medium-high
heat until slightly golden, stirring
often. Turn heat off and cover
skillet with lid to keep chicken
warm.
Bring a large pot of water to a
boil. If desired, add salt to taste.
Add linguini. Bring water to a
boil again, then reduce heat
to medium. Cook for 8 to 10
minutes or according to
directions on package. Stir
linguini occasionally (with
wooden spoon) to prevent
from sticking to the bottom of
pot.
While you cook linguini, pour
heavy cream into medium skillet.
Add wine.
Add pepper.
Bring almost to boil, over
medium-high heat. Turn heat to
low and add cheese. Stir
immediately with wooden spatula
or wire whisk.
Cook over low heat until all
cheese melts, about 1 minute.
Stir constantly.
Place colander into sink
and drain linguini.
Place linguini on serving plates.
Pour hot cheese sauce over
lingiuni and add several pieces
of chicken to each plate. Toss
gently with fork. Sprinkle with
chopped chives.
Serve hot.
Creamy Chicken Linguini
Fancy but easy, this dish is guilt-free when
prepared with light cream and reduced-fat Cheddar
cheese.
