Ingredients:
1 package linguini (12 ounces)
1 cup heavy cream
1/2 cup shredded Cheddar
cheese
4 chives
1/2 pound cooked medium
shrimps, thawed and peeled
salt to taste
1/4 teaspoon ground white (or
black) pepper
1/4 cup dry white wine
Cut chives finely, crosswise.
Bring a large pot of water to a
boil. If desired, add salt to taste.
Add linguini. Bring water to a boil
again, then reduce heat to
medium. Cook al dente (to taste)
for 8 to 10 minutes or according
to directions on package. Stir
linguini occasionally (with
wooden spoon) to prevent from
sticking to the bottom of pot.
While you cook linguini, pour
heavy cream into medium skillet.
Add wine.
Add pepper.
Bring almost to boil, over
medium-high heat. Turn heat to
low and add cheese. Stir
immediately with wooden spatula
or wire whisk.
Cook over low heat until all
cheese melts, about 1 minute.
Stir constantly.
Add shrimps and mix with cream
to cover them evenly.
Place colander into sink and
drain linguini.
Place linguini on serving plates.
Pour hot cheese sauce with
shrimps over lingiuni. Toss
gently with fork. Sprinkle with
chopped chives.
Serve hot.
Creamy and full of flavor, this is an incredibly easy dish
to make. Substitute wine with chicken stock for variety.
