Ingredients:

2 chicken breast
1 teaspoon coarse kosher or
sea salt (or to taste)
1/2 teaspoon garlic powder
1 cup all-purpose white flour
4 to 6 tablespoons olive oil

Slice chicken breast into
1/4-inch thin strips, crosswise.

Sprinkle with salt.

Sprinkle with garlic powder.

Put flour into shallow bowl. Add
one piece of chicken meat at a
time.

Flip over to coat meat with flour
evenly.

Lift meat piece and shake
excess flour. Repeat with
remaining chicken slices. You
may keep floured pieces on
large plate while you fry a batch
at a time.

Pour olive oil into medium skillet.

Add several chicken meat
pieces to skillet. Do not
overcrowd skillet with meat!

Fry over a medium heat 4 to 5
minutes or until golden and crisp
on bottom. Flip meat over with
spatula.

Cook for another 4 to 5 minutes,
or until golden and crisp. Repeat
with remaining meat pieces.

Serve warm.
Tender yet crispy chicken bites are a wonderful
light meal on their own or served with green salad.
