You'll need:
2 eggs
2 Tbsp vegetable oil
1 cup water
2 Tbsp white sugar
1/3 tsp salt
1 tsp baking soda
1 cup all-purpose flour
Step 1
Preheat griddle to 350 degree F.
Preheat oven to 180 degree F.
Have a heatproof plate ready to
keep cooked pancakes warm in the
oven.
Step 2
Place water, eggs and oil into a
large mixing bowl.
Step 3.
Whisk together until smooth.
Step 4.
Add sugar.
Step 5.
Add salt.
Step 6.
Add baking powder.
Step 7.
Add flour.
Step 8
Whisk together. Do not overmix!
The batter should not be beaten
smooth. Otherwise, pancakes
will not be fluffy. It is okay if
there are small lumps of
unmoistened dry ingredients in
the batter.
Step 9
Test griddle: sprinkle a few
drops of water on it. If water
bounces and spatters off
griddle, it is hot enough. Spray
griddle with cooking spray.
Step 10
Using a 4 oz. ladle (about 1/4
cup), pour batter onto
preheated griddle.
Step 11
Cook until surface of pancakes
have some bubbles and a few
have burst, about 2 to 2 1/5
minutes. When pancakes are
slightly dry around edges, flip
them over, using a spatula.
Step 12
Cook until golden on bottom for
about 1 more minute. Transfer
to platter and keep warm in
oven, stacked.
Step 13
When ready to serve, arrange
pancakes on plate.
Step 14
Place a little of jam in the
center. Serve immediately.

Tip:
You may also serve the
pancakes with whipped cream,
fresh fruit and berries, chocolate
chips, or maple syrup.
Thin and delicious, these pancakes melt in your
mouth. Serve with jam or cream cheese.
