Ingredients:

1 pound cod or catfish
1/2 cup bread crumbs (seasoned
or plain)
1/4 cup water
1 medium onion
1 egg
1 teaspoon salt or to taste
1/4 teaspoon white (or black)
ground pepper
4 tablespoons olive oil

Place bread crumbs into small
bowl. Add water.
Stir bread crumbs to cover them
evenly with water.
Let soak for several minutes so
that bread crumbs soften.
Cut onion in food processor or
by hand.

Place fish into food processor.
Pulse fish until finely chopped
and there are no large chunks
left.
Place fish into a bowl and add
chopped onions.

Add soaked bread crumbs and
egg.
Add salt.

Add pepper.

Mix well to blend all ingredients.
Pour oil into a large skillet. Heat
skillet over medium heat.

Dip your hands in water to
prevent fish from sticking to
them. Take about one heaped
tablespoon of fish mixture and
form cakes with your hands,
flattening them slightly.
Place fish cakes into heated
skillet.

Fry fish cakes over medium heat
for 5 minutes on each sides,
until dark golden brown.
Serve immediately.
Tender and yummy, these fish cakes melt in
your mouth! Add a pinch of freshly grated
nutmeg for additional flavor.
