Sausage and Cheese Cups
INGREDIENTS:

1 package puff pastry (1 pound)
1 pound thin hot-dog-like
sausage or hot dogs
8 ounces Cheddar cheese
2 tablespoons chopped parsley
cooking spray

DIRECTIONS:

Preheat oven to 400 degrees F.
Unfold one puff pastry sheet
onto cutting board. Without
rolling it out, using sharp knife,
cut puff pastry into 3 equal
strips, lengthwise.




Cut puff pastry into equal 3
strips, crosswise, making 9
equal squares. Repeat with
remaining puff pastry sheet.
















Prepare filling:
Cut sausages into thin slices.


















Cut cheese into 1/2-inch thin
slices.

















Cut each slice into 2 or 3 thin
strips.

















Cut each strip into small pieces.


















Put sausage slices and cheese
pieces into bowl.


















Add parsley.

Mix well.




































Grease muffin tin with cooking
spray. Place each puff pastry
square into each muffin cup,
gently pressing center of square
down and having the "ears"
sticking out a bit. If you have any
muffin tin cups left unused, fill
them halfway with warm water.
This will allow even baking.










Fill cups with sausage and
cheese filling evenly. Bake in
preheated oven at 400 degrees
F 10 to 12 minutes, or until
puffed and golden.







Serve hot.
