INGREDIENTS:

1 Romaine lettuce
1/2 English cucumber (or 1 large
Kirby cucumber)
2 tomatoes
3 ounces Feta cheese (regular
or spiced), divided
1/4 cup extra virgin olive oil
5 to 6 olives per plate, pitted



DIRECTIONS:

Cut lettuce and place it into
large bowl.

Dice tomatoes.

Cut Feta cheese.

Add half of Feta cheese to bowl

Pour olive oil over salad.



















Toss salad gently with tongs or
two spoons.

















Place salad on serving plates.
Spread remaining Feta cheese
evenly among plates. Top each
salad with 5 to 6 olives.
