Cheese and Ham Muffins
INGREDIENTS:

3 ounces ham, diced
1 tablespoon vegetable oil
2 eggs
3/4 cup all-purpose white flour
3 ounces grated Cheddar
cheese plus 3 tablespoons
1/2 teaspoon salt
1 tablespoon baking powder
2 tablespoons heavy cream


DIRECTIONS:

In large skillet, heat oil over
medium heat and cook diced
ham until browned and crisp,
stirring often. Remove to plate to
cool to room temperature.





















Preheat oven to 375 degrees F.
Put flour in large bowl. Add eggs.

















Add cheese.


















Add salt.



















Add baking powder.


















Add ham.


















Add heavy cream. Mix just to
combine all ingredients. Do not
overmix!
















Line muffin tin with paper cups.



















Spoon batter into paper cups,
filling 3/4 of each cup. Bake in
preheated oven at 375 degrees
F about 20 to 25 minutes.















Test with toothpick: if it comes
out clean (nothing sticks to it),
the muffins are done.

















Sprinkle muffins with remaining 3
tablespoons of cheese,
spreading it evenly among the
cups. Put muffins into hot oven
for 3 minutes or until cheese
melts.
