Irish Shepherd's Pie
Simple comfort food!

INGREDIENTS:

2 tablespoons olive oil
1 large onion, finely chopped CLICK HERE for instructions
2 large carrots, grated CLICK HERE for instructions
2-3 celery ribs, chopped CLICK HERE for instructions
2 pounds ground round beef
1 teaspoon salt (or to taste)
1/4 teaspoon ground black pepper (or to taste)
1/2 teaspoon garlic powder
1 tablespoon fresh tarragon leaves
1/2 cup chopped parsley
2 pounds potatoes
1/2 cup shredded Parmesan cheese, divided

 

 

Prepare potato puree. CLICK HERE for instructions

Heat oil in large skillet over medium heat. .


Add onion.




Cook over medium heat until soft and light golden, about 7-8 minutes. Stir often.

 

 

 

 

Add carrots.

 

 

 

 

 

 

 

 

Add celery.

 

 

 

 

 

 

 

 

 

 

Stir. Cook over medium heat 5 minutes. Stir often.

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

Add ground beef.

Break into small pieces. Cook until no longer pink, about 10 minutes. Stir often.

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

Add salt.

 

 

 

 

 

 

 

 

 

Add pepper.

 

 

 

 

 

 

 

 

 

Add garlic powder.

 

 

 

 

 

 

 

 

 

 

 

Add tarragon.

Add parsley.

Stir well and cook 10 minutes more.

 

 

 

 

 

 

 

Preheat oven to 400 degrees F. Add 1/4 cup Parmesan cheese to hot potato puree.

 

 

 

 

 

 

 

 

 

Stir well.

 

 

 

 

 

 

 

 

In ungreased baking dish, spread meat in even layer. Top with potato puree and smooth top with back of spoon.

With back of fork, make waves on top.

 

 

 

 

 

 

 

 

 

Sprinkle with remaining 1/4 cup Parmesan cheese.

 

 

 

 

 

 

 

 

Bake in preheated oven 25-35 minutes, or until golden on top.

 

 

 

Serve hot.
