INGREDIENTS:

1 medium onion
2 tablespoons olive oil
1 celery
1 pound baby carrots, peeled
10 ounces frozen green cut
beans
1 can (14 1/2 ounces) beef broth
1 tablespoon fresh lime juice
1 teaspoon dried basil
1/2 teaspoon salt (or to taste)
2 bay leaves
1 can (14 1/2 ounces) stewed
tomatoes
1 pound frozen prepared
meatballs


DIRECTIONS:

Cut onions.

Pour olive oil into pot. Heat over
medium heat 1 to 2 minutes.










Add slivered onions.


















Saute over medium heat 4 to 5
minutes, or until soft and slightly
golden.
















Slice celery.

Add celery to pot.


















Add carrots.


















Add frozen green beans.



















Add beef broth.


















Add lime juice.



















Add basil.


















Add salt.



















Add bay leaves.


















Stir.


















Add stewed tomatoes.


















Stir again.



















Put meatballs on top.





































Cover with lid. Bring to boil.
Reduce heat. Cook over
medium-low heat 15 to 18
minutes or until meatballs are
done and vegetables are soft
but still a bit crisp.







Serve hot.
