Ingredients:

10 ounces (1 package) frozen
peas
1 tablespoon butter
1/2 teaspoon salt (optional)
1 lemon
4 or 5 mint leaves

Bring large pot of water to rapid
boil. Add frozen peas.
Add salt, if desired. Bring to a
second boil. Separate with fork,
if necessary, for uniform
cooking. Reduce heat to low and
simmer for 3 minutes.















Place colander into sink and
drain peas completely.


















Cut mint leaves in half,
lengthwise.

















Stack leaf halves and cut them
into thin strips, crosswise.


















In saucepan, melt butter.


















Add mint leaves.


















Add cooked green peas. Stir
with wooden spoon or spatula to
coat peas with melted butter
evenly.
















Cover with lid and cook until
warmed through, about 2
minutes.
















Meanwhile, cut lemon in half,
lengthwise.

















Cut each half in half again,
lengthwise.






Place peas into serving plates,
along with one lemon quarter.
Serve immediately.
