Saute for about 6-7 minutes
over medium heat, stirring
several times.
When the mushrooms are
tender, take them out of the
frying pan, squeezing all liquid
out (for that, simply press the
mushrooms with a spoon).
Add mushrooms to the onions
in frying pan. If desired, add salt
to taste.
Sprinkle a large wooden (or
marble)cutting board with some
flour.
Place puff pastry in the middle
of the board.
Sprinkle puff pastry with some
flour.
Using a rolling pin, roll puff
pastry to stretch out.
The pastry will almost double in
length.
Place one end of puff pastry
over rolling pin and lift it up.
Dust board with more flour
again.
Place puff pastry back onto the
board, this time the longer side
facing you.
Roll out puff pastry to make
a large square.
Now puff pastry is rolled out
and is about 1/8 inch thick.
Preheat the oven to 375
degrees F.
Using a sharp knife, cut puff
pastry into 4 strips, lengthwise.
Cut each strip into 4 equal-size
squares.
Place one teaspoon of
mushroom filling in the middle
of each square.
Fold one corner of the square so
it touches opposite corner,
forming a triangle.
Pinch edges to stick them
together.
Place triangles onto a greased
baking tray or cookie sheet
(spray it with a cooking spray or
rub with margarine or butter
stick).
Break egg into a small bowl.
Mix it well with fork.
Brush each triangle with egg.
Place baking tray in center of
preheated oven. Bake
triangles at 375 degrees F for
about 25 to 35 minutes or until
crisp and golden brown.
Baking time may vary
depending on the oven.
Serve warm.

1 package puff pastry (1
pound)
1 pound mushrooms
2 Tbsp extra virgin olive oil
optional: salt to taste
1 egg
some flour for dusting
Using a sharp knife, slice onion
in half, lengthwise, all the way
through the root.
Take brown skin off, and discard.
Place halves cut side down on
cutting board. Cut a small part off
the top of each half.
Slice the onion thinly,srosswide,
at even intervals. Hold onion
with your hand in the process.
Separate onions into single
pieces.
Pour the oil into a large frying
pan.
Add onions and saute over
medium heat for 3-4 minutes
until slightly golden, stirring
several times with a wooden
spatula.
Slice mushrooms thinly.
