Ingredients:

6 Ocean Perch filets, washed
and pat dried
1 red pepper
1 green pepper
1 medium tomato
2 celery stalks
salt to taste
cooking spray
2 tablespoons extra virgin olive
oil
1 medium onion
2 garlic cloves
1/2 cup shredded Cheddar
cheese
1/2 cup half and half or light
cream
several sprigs of parsley


Preheat oven to 375 degrees F.

Grease oven-proof dish with
cooking spray and add perch
filets in one layer, skin down.
Cook in the preheated oven
for 20 minutes. Flip fillets with
spatula and cook for another
10 minutes or until fish begins
to flake.

Put oil into pan.



















Saute onions over
medium-low heat until golden
brown, about 5 minutes.
Dice both peppers. CLICK

Add peppers to onions.
Add celery to peppers.

















Add salt to taste.



















Dice tomato.

Add tomatoes to peppers.
Cover pan with lid and cook
vegetables over medium-low
heat for about 10 minutes or
until peppers are tender.














Chop parsley.

Add parsley to peppers five
minutes before peppers are
done.
Slice garlic. CLICK HERE for

Add to peppers just 1 minute
before peppers are done.
When vegetables are tender,
add cream and cheese and
mix well until cheese melts.
Place fish on serving plate
and pour sauce over it.
