Serves 2

Ingredients:

Omelet:
4 large eggs
1/4 cup milk
1/4 teaspoon salt (or to taste)
1 tablespoon butter or margarine
4 chives

Filling:
1/4 pound ground beef
1/2 small onion
salt to taste

First, prepare filling.
Dice onion.

Pour oil into large skillet.
Add onions. Saute onions over
medium-low heat, stirring
occasionally, until light golden.
Add ground beef. Break beef
apart into small pieces.
Mix meat with onions.
Add salt.
Cook meat over medium heat for
10 to 12 minutes or until meat
turns an even brown and is no
longer pink in color. You may
make more meat in advance and
use part of it in another recipe,
such as chili.
In a medium bowl, whisk
together eggs with a fork.
Add milk.
Add salt.
Heat a small nonstick skillet over
medium heat. When you hold
your hand 2 inches above the
skillet surface and it feels warm,
add butter and swirl it to coat
bottom of pan.
Pour eggs mixture into skillet
and let the eggs sest slightly.
With a wooden fork or spatula
(or heatproof flexible spatula),
push the eggs toward the
center from edges.
Tilt pan to let egg fill the spaces.
Repeat until omelet is just set, 1
to 2 minutes.
Sprinkl one half of omelet with
beef.
Using spatula, gently fold omelet
over filling.
Slide omelet onto a serving
plate. Enjoy!
