Ingredients:

4 cups frozen peas, thawed
slightly (two 10-ounce packages)
1 cup fresh mint leaves
3 cups chicken broth
1 teaspoon salt
1/4 teaspoon ground white (or
black) pepper





Wash mint leaves and place
them into food processor.





Add peas.


















Add salt.


















Add chicken broth.



















Add pepper.


















Process on high for one minute
or until smooth.

















Pour pea puree into medium
pan and bring to boil over
medium-high heat. Reduce heat
to medium and cook for 1 to 2
minutes, stirring constantly.








Serve hot.
