INGREDIENTS:

for fish:

1 one-pound fresh skinned
salmon fillet (about 1-inch thick)
2 teaspoons fresh lime juice
1/2 teaspoon ground cumin
optional: salt to taste
1 tablespoon vegetable oil

for salsa:

2 cups diced pineapples
4 or 5 chopped scallions
1/2 diced red bell pepper
1 tablespoon snipped cilantro
1 tablespoon honey
1 tablespoon fresh lime juice


DIRECTIONS:

Brush salmon with 2 teaspoons
lime juice.





Sprinkle with ground cumin. If
desired, sprinkle with salt.




























Pour vegetable oil into large
skillet and heat over medium
heat.

















Add salmon. Cook over
medium-low heat for 5 minutes,
or until edges of fish become
pale.
















Flip over with large spatula.

















Cook for another 5 minutes or
until fish flakes easily when
touched with fork.

















Place diced pineapples into
large bowl.

Add lime juice.


















Mix with spoon to blend all
ingredients well.
