INGREDIENTS:
4 medium cooked potatoes
1 red bell pepper
1 garlic clove
4 large eggs
1/4 cup milk
1/2 teaspoon salt (or to taste)
2 teaspoons grated Parmesan
cheese
DIRECTIONS:
Cook potatoes or use potato
leftovers.

Slice potatoes
crosswise.
Dice bell pepper.

Chop garlic.

Melt butter in large skillet over
medium heat.
Add potato slices.
Sprinkle diced peppers between
potato slices.
Cook 4 to 5 minutes over
medium heat, or until potatoes
are golden and crisp on
bottoms. Flip potatoes over with
fork or spatula.
Sprinkle garlic over potatoes.
Cook 4 to 5 minutes over
medium heat, or until golden
and crisp.
Meanwhile, break eggs into
medium bowl. Add milk.
Add salt.
Whisk together with wire whisk
or fork until smooth.
Pour egg mixture over potatoes.
Cover with lid. Lower heat to
medium-low. Cook 4 to 5
minutes or until desired
doneness of eggs.
Slide frittata onto large serving
plate.
Sprinkle with Parmesan cheese.
Serve immediately.
