Quick Egg Crostini
Ingredients:

4 slices of Ciabatta bread
extra virgin olive oil for basting
4 eggs
salt to taste
1/2 teaspoon vegetable oil for
frying
mixed greens, to serve



Preheat oven to 400 degrees F.

Use pastry brush to brush each
slice of Ciabatta bread lightly
with little olive oil (on one side
only).



Place bread slices oiled side
down onto baking sheet and
bake in preheated oven for 10
minutes or until crisp and turning
golden brown.














Meanwhile, heat 1/2 teaspoon
oil in non-stick pan over medium
heat. Crack egg by tapping it on
the side of pan as near to the
middle of shell as possible. Use
your thumbs to prise the shell
halves apart gently, breaking
the shell and releasing egg into
pan.











Allow the egg to bubble around
the edges before adding
another egg. If desired, sprinkle
with pinch of salt.















Cook eggs lightly for about 2 to
3 minutes, or until desired yolk
firmness. The whites should
become completely opaque and
the edges should be just turning
brown.




Place bread onto serving plate.
Carefully lift fried eggs with
spatula and transfer onto bread.
Add some mixed greens to plate
and serve immediately.
