Ingredients:
1 large red bell pepper
1 large green bell pepper
1 tablespoon cherry vinegar
1 tablespoon extra virgin olive oil
2 tablespoons grated Parmesan
Cut both red and green

Place peppers into mixing bowl.
In small bowl, combine together
cherry vinegar and olive oil. Mix
until well-blended.
Pour over peppers.
Toss well to cover peppers
evenly.
Cut chives thinly, crosswise.
Place peppers into serving
bowls. Sprinkle with Parmesan.
Sprinkle with chopped chives.
