2 pounds red potatoes
2 Tbsp extra virgin olive oil, plus
extra for drizzling
2 Tbsp dried rosemary
Preheat oven to 450 degrees F.
Cut potatoes in half, lengthwise.
Cut each half in half again,
lengthwise.
Pour extra virgin olive oil on
baking sheet.
Using a brush, spread oil evenly
all over baking dish.
Place potato quarters on
greased pan, skin down.
Drizzle extra virgin olive oil
over potatoes.
Sprinkle with dried rosemary.
Bake at 450 degree F for 30
minutes or until potatoes are
slightly golden brown.
Serve hot.
