Ingredients:

2 cups baby spinach, rinsed and
drained
1 red bell pepper
1 green bell pepper
1 Kirby cucumber
1 medium tomato
4 chives
2 tablespoons grated Parmesan



Place baby spinach into large
bowl.
Cut both red and green peppers.

Cut cucumber into half-rings.

Add tomatoes wedges to
spinach.
Toss salad gently.



Cut chives into about half-inch
pieces, crosswise.
Place salad on serving plates,
sprinkle with Parmesan and
chives and serve.
