Sushi Rice
Put rice in strainer and wash
with cold water until water (from
rice) runs clear. Drain rice.


















Put rice in pot and add water.
Close pot with lid tightly. Bring to
boil, reduce heat to low, and
simmer for 20 minutes, or until
rice absorbs all water and is
cooked.













Remove pot from heat. Remove
lid and cover pot with tea towel.
Let stand for 10 to 15 minutes.
















Meanwhile, prepare vinegar
mixture:
Put vinegar into small pot.


















Add sugar.



















Add salt.


















Mix well. Heat gently over
medium heat until sugar
dissolves, stirring constantly. Do
not boil. Remove mixture from
heat and cool slightly.














Run spatula through rice to
gently separate grains and
slowly pour vinegar mixture over
rice at the same time.















Gently mix rice with spatula.
Cool rice until it reaches room
temperature. Keep rice covered
until ready to use. Make sure
rice doesn't get too cold as it
wouldn't stick together well.
