INGREDIENTS:

1 pound boneless, skinless
chicken breast
2 tablespoons vegetable oil
4 to 5 tablespoons chopped
scallions
4 ounces Chinese sweet and
sour sauce



DIRECTIONS:

Chop scallions.

Set aside.






Cut all fat off the chicken and
discard.

















Cut chicken into thin slices,
crosswise.





































Heat oil in wok over high heat.



















Add chicken.


















Cook over high hear 4 to 5
minutes, stirring constantly.

















Add chopped scallions. Reserve
some for garnishing.

















Add sweet and sour sauce. Stir
well and cook 1 to 2 minutes or
until heated through.








Serve hot, on top of cooked rice.
This is a very quick and easy dish best served
over cooked rice.
