Ingredients:
For fish:
2 boneless, skinless fish filets
(such as cod, trout, etc)
salt to taste
For egg dip:
1 egg
1/4 cup all-purpose white flour
1/4 teaspoon salt (or to taste)
For flouring:
1/2 cup all-purpose white flour
2 tablespoons vegetable oil for
frying
Break egg into small bowl.
Add flour.
Add salt.
Mix with wire whisk until smooth.
Cut fish file into 3 or 4 pieces.
Sprinkle with salt, if desired.
Put flour into small bowl.
Place one piece of fish into flour.
Flip over to coat fish with flour all
over.
Carefully lift fish with your
fingers or fork and shake off
excess flour.
Place fish piece into egg mixture.
Flip over to coat with egg
mixture evenly.
Carefully lift fish with your
fingers or fork and shake off
excess egg.
Pour 2 tablespoons olive oil into
large skillet and heat over
medium heat until oil is hot but
not smoky.
Add fish pieces. Make sure that
fish pieces don't touch each
other
Saute over medium heat for
about 4 to 5 minutes, or until
golden and crisp on bottom. Flip
over with spatula.
Cook on another side for 4 to 5
minutes, or until golden and
crisp on bottom.
Take fish out and place onto
serving plate. Serve immediately.
If you had eaten this dish in a restaurant, you'd
be back there next day!
