1 1/2 cups all-purpose flour 1/3 cup sugar 3 tablespoons dark brown sugar 2 teaspoons baking powder 2 large eggs 1/3 cup vegetable oil 1 teaspoon vanilla extract 1/2 cup milk 1 cup semisweet chocolate chips
12 paper cups 12-muffin pan
Preheat oven to 375 degrees F.
In medium bowl, whisk eggs with wire whisk until blended.
Add oil.
Add vanilla extract.
Add milk.
Whisk until well-blended and smooth.
Put flour into large bowl. Add sugar.
Add baking powder.
Add brown sugar.
Mix with spoon to blend all ingredients well.
Pour egg mixture into bowl with flour mixture.
Mix with spoon just until flour is moistened, not until smooth. Do not over mix!
Fold in chocolate chips. Do not over mix! Reserve some chocolate chips for decorating.
Line muffin pan with paper cups. Spoon batter into cups, filling cup by 3/4, leaving room for muffins to rise.
Place several reserved chocolate chips on top of each muffin.
Bake in preheated oven at 375 degrees F for 20 to 25 minutes, or until browned. Test with wooden toothpick or skewer: insert it into center of one muffin - if toothpick or skewer comes out clean (nothing sticks to it), the muffins are done.
Let cool in pan for 5 minutes before unmolding.
