rock the knife up and down,
raising the heel for about an
inch. Keep the knife stable on
the board by holding it with
your other hand.
Cut scallions thinly, crosswise.
Cut chives finely, crosswise.
Cut chives into about half-inch
pieces, crosswise.
Put spinach into small pile.
Chop thinly, crosswise.
Cut mint leaves in half,
lengthwise.



















Stack leaf halves and cut them
into thin strips, crosswise.
Cut core off the lettuce and
discard.


















Stack leaves on top of each
other.

















Cut leaves into strips, crosswise.
Cut cilantro crosswise into rough
and fairly small pieces.



Tip: You can cut cilantro and
parsley with a knife or a pair of
kitchen shears. Simply put
parsley in bowl and snip it with
shears.
