Ingredients:

1 large zucchini
1 egg
1/4 cup buttermilk
1/2 teaspoon salt
1 teaspoon baking powder
1/3 cup all-purpose flour
3 tablespoons olive oil for frying





Grate zucchini.


























In medium bowl, beat egg with
wire whisk.


















Add buttermilk.



















Mix well.


















Add salt.


















Add baking powder.



















Mix well.


















Add zucchini and mix with spoon.
Well to blend all ingredients.




































Add flour and mix well to blend
all ingredients.





































Pour oil into large skillet and
heat over medium-high heat,
about 30 to 60 seconds.
When skillet is hot, reduce heat
to medium. Spoon zucchini
batter (about one heaped
tablespoon), forming small
latkes.















Cook over medium heat for 2 to
3 minutes, or until golden-brown
on bottoms. Flip with spatula. Be
careful not to break latkes as
they would be very tender and
fragile.















Cook for another 2 to 3 minutes,
or until golden-brown.









Serve hot.
